Since then, Dijon, France has become an important center for the mustard industry, and the region is known as the mustard capital of the world. Mustard is produced by grinding the seeds to a powder and then adding water or vinegar to create the spread. Oil is released when the seeds are ground, which is the source of it sharpness. This means that if we leave the jar open, we will lose the sharp taste.
